A Little Delayed

So, I’m totally off on my time (what year is it again?) due to being on break so I TOTALLY forgot about WIAW yesterday! (It’s already Thursday?? Wait what??)

So without further ado:

I don’t have a whole lot to share with you guys, but I do have an awesome recipe! I decided I was craving mac’n'cheese Tuesday night and I told my bf I’d cook dinner for him and his brother who is in town, soooo that’s how this lovely recipe was born:

(I apologize for the appalling photography, I’m getting a new camera for my birthday next month, so I’m just trying to hang in there!)

JessieBear Baked Mac’n'Cheese

-1 (12 oz) box of elbow noodles

-1 egg

-2 cups whole milk (or whatever you’ve got on hand)

-3-4 tablespoons melted butter

-3-4 cups shredded cheese (I used my fav:  Kerrygold’s “Dubliner” cheese and shredded cheddar)

-Breadcrumbs

-Salt, Pepper, Oregano, Garlic Powder to taste

1) Cook the noodles for about 4 minutes, so they’re slightly underdone.

2) Preheat the oven to 350

3) In one bowl whisk the milk and egg. Add the melted butter, cheese, and spices to taste. Mix well.

4) Once the noodles are done cooking, mix them in the bowl as well.

5) Pour into a baking dish (I used 9 by 13) and put a couple handfuls of breadcrumbs on top (and more cheese if you want an ooey-gooey cheese “crust”)

6) Bake for 35 minutes, or until golden and bubbly on top.

We had it with a side of roasted zucchini and some steak (I was not pleased with how the steak turned out, but hey- you win some, you lose some.)

Because I wasn’t happy with how the steak turned out, I tried again last night for dinner:

Plus roasted broccoli and mahi mahi. Success.

Just mixed the strips with minced garlic (the kind in the jar), lime juice, olive oil, and lowry’s seasoning salt and baked at 400 for about 10-12 minutes. Perfection. In fact, the boy said it was the best thing I’ve ever fed him. I’ll take it!

Oh well. I say 2013 is shaping up to be a great year already!!

  1. That steak dinner looks delish!! I’m not too great at cooking meat… I tend to leave that up to the man. lol

    • See I’m usually really good at it! I was super bummed the steak wasn’t as good as it looks. Ah well, I’ll let my man cook it on the grill for me next time ;) . & thanks! I love dressing up sometimes :P
