I Survived!

I survived the first two days of classes! Monday wasn’t as bad as I expected (the night class was a little on the long side, but the professor said the material will be more interesting next week.. fingers crossed!) And Tuesday was…. difficult, but the classes weren’t that bad. Bonus? I have NO classes on Wednesday AND Friday. Sweet Jesus, I’m happy about that! I jammed a lot of classes in on Tuesdays and Thursdays, plus an early morning lab and night class on Monday to get that schedule, but I still think it’s pretty kick ass. Waking up at 7:00 on T/Th and not getting a break until 3:00 is quite rough, but hey, welcome to the real world? At least those classes are fairly interesting. I’ll talk more about my classes later though, because it’s time for WIAW:

I’ve really been focusing on getting my sh*t together after how horribly I ate at Christmas and NYE. I’ve been consistently tracking calories since the first annnd working out (as usual, but I have been upping the intensity a bit). So I’ll show you some pretty pics of what I’ve been shoving down my pie hole and then I’ll show you the boring calorie count for this week ;) .

Literally two-ingredient pancakes everyday for breakfast (I love switching things up for dinner, but I’m not going to lie, when I find a breakfast I’m really digging I will have it everyday for months.)

I did buy chocolate coconut butter to put on top to switch things up (with a little vanilla almond butter as well)

I’ve been putting garlic hummus, guacamole, turkey lunch meat, onion, and lettuce on them and LOVING it.

I made Danielle’s Gingerbread Cake for One and I smothered it in coconut butter after taking this pic. (I promise it tasted better than it looked.)

  1. oooh man, that’s a great schedule!! i’d MUCH rather a few packed days and get wed/friday off. My absolute ideal work week would be to have Wednesday off – makes the week fly by!

  2. Wow awesome job with the calorie tracking and meeting your goals! Your food looks good to. I like the idea of an open faced sandwich for lunch to switch it up. I like to do a half of a sandwich but it always feels so small. I’ll have to try this out!

  3. that’s so nice that you have no classes on wednesday and (especially) Friday (3 day weekends!!) I had my first night class last semester….yeah it would suck going their every Tuesday but then I didn’t have to worry again until the next week, I have another one this semester so hopefully I feel the same way haha

    • Yeah, I had a lot freshman year and I always felt the same. They drag on and feel like forever, but it is very nice to just get it over with. & I actually rarely have Friday classes because my school is on a weird quarter system and only have Friday classes for a couple business classes and some language classes. Love it.

  5. I love the easy AM pancakes that only take a few ingredients. I usually add almond butter so I will have to give it ago with just banana and egg. Great idea! Congrats on surviving your first few days back!
