Thankful Thursday

Sweet jesus I am so thankful it is Thursday. Weekend time! But before I go stuff my face with sandwiches from Potbelly’s and have a Game of Thrones marathon with my love, I’ve got the Thankful Thursday link up:

I am thankful for deciding with my friends that Wednesday night is girl’s night and getting free food courtesy of Miss Bella:

I am thankful for getting pictures of this lil guy from my mom:

I am thankful for trying new recipes:

SO FREAKING GOOD. I replaced butter with Greek yogurt and they were still fantastic. Sweet and fluffy, but still way more filling than any normal muffin.

Side note, I burned my arm getting them out of the oven:

It hurt like a biotch BUT I am very thankful that in all my years of cooking I have never burnt, or otherwise injured myself.

Hope everyone has a fantastic Friday tomorrow and weekend!

    • My boyfriend looooved the books and got me into the show before we were dating & I totally fell in love with the show (and him haha). It’s really graphic (violence, nudity, etc) but SUCH an interesting story and some of the best characters I’ve seen in a show.

  1. I LOVE Game of Thrones!! Can’t wait until it starts back up again in March! So happy that you tried my Low-Carb Sweet Almond Buns, yay!! Putting Greek yogurt in them was a great idea too!! :) Sorry about the burn. :(

  2. Ouchie! I hate burns, but it must have been worth it because those muffins look awesome! Your dog is adorable, too! Hope you had a fun girls night and have a fabulous weekend, Jessie!

    • I’m just glad the burn didn’t blister up and turn into an ugly little bubble! (Is it bad that was the first thought I had after burning my arm? I’m so vain sometimes haha). But seriously so worth it, the muffing are fan-freakin-tastic. Hope you have a fantastic weekend too Abby :D

    • It’s so hard! Everybody has different things going on. That’s why I’m super glad we are making a point to have a set day every week. Hopefully that habit will carry over after we are finished with school.

And the muffins! oh my god. They’re beautifully delicious. Totally worth the burn. So so so good.

  3. those muffins look so good! I have to say though I have had my fair share of burns from cooking or eating mishaps (such as being too impatient and eating a bite of steaming hot food only to end up with a sore mouth haha).
