Ahw Yus. Staying on Track.

Proud to tell you guys that I stayed on track every day this week, EVEN the weekend! WEeeeeeeee.

I’ll start with the eats and then I’ll show ya the stats!

Two-Ingredient Pancakes for brekkie (I know, I know, I can’t stop!)

Smothered in Justin’s Chocolate Almond Butter this week. I remember not loving it when I bought a jar once, but I am LOVING it right now. I wonder if I just got a bad jar, or maybe the single serve containers keep it more fresh? I dunno.

More Shepherd’s pie. Like alllll week. I know, I’m so boring. But it’s so yummy!

Cute, no? I just took that almond bun recipe I made earlier in the week and instead of just pouring it into one muffin tin, I poured it into two, making 12 little flattened buns instead of 6 puffy ones. Then I made little sandwiches out of them with chocolate PB2. Sooooooo gooooooood.

The numbers are a little higher this week, because I upped my workouts. Still staying within my original budget EVEN with the weekend. Which is a huge deal for me. I have such a hard time with the weekend, especially now that all my friends are back at school. The real test will be this weekend though, because I’m going home for the weekend. Wish me luck!

    You’ve had a GREAT week in calories! Nice! If I’m trying to shed a couple of pounds or be more aware, anything less than 1500 is soooooooooo hard for me!

    • Thanks! I’m in love with it. Healthy and delicious. (My friends have deemed that my catch phrase and say it literally every time they see me eating something). & It’s easy for me to eat less than 1500….during the week. Weekends are my enemies for eating healthy! Glad I stuck with it this weekend though.

    • SAME. I totally tried your oatcakes yesterday, but had a cooking fail and burnt the sh*t out of them :( . I was planning on including them here, but that didn’t work out lol. & thanks! Super yummy and filling.

    • haha that’s what I normally do, but I had some free time this weekend to bake up a bunch of goodies. These mini muffins were actually straight from the fridge because I made them earlier!

  2. Great job on sticking with your plan & staying on track! The two-ingredient pancake looks delish, & I LOVE Justin’s Chocolate Almond Butter (like love it so much that I can’t keep a jar in the house because it’s too addicting). It tastes like chocolate frosting to me. The little mini almond buns turned out so nice! That’s more like how I make them… so they’re flat like a muffin top. :) So good!!

    • Love it! I can’t keep a jar in the house either, but I am LOVING the single serve portions that you can buy at whole foods (or other grocery stores).

      & I think they puffed up when I tried your original recipe because I swapped butter for yogurt? Not sure. Either way, I’m totally addicted to them (and my bf who is not a health nut!).

  3. Good luck! That’s awesome that you made it through the weekend last weekend! You can do it! Also, I just made 2 ingredient pancakes and I have some leftover so tomorrow I’ll have to try them with some almond butter spread. :)

    • Thanks girl! My mom is cooking healthy dinner one night and then we are going to an upscale restaurant the other night (I’m that oddball hoping they give us small portions). So I think I can keep it in control!

      & My favorite way to eat two ingredient pancakes is definitely with almond butter spread! Yuuuuuum.

  4. That bowl of Shepard’s pie looks like a big bowl of deliciousness.
    Great job on staying on point; counting all those calories can’t be easy. I’ve done a little food journaling at a reader’s request and its a pain the @ss. I can’t even imagine adding the calories in. Kudos to you for such diligence.

    • Yeah, it’s definitely a pain at first, but I like to write everything down normally (like even my workouts and classes and hanging out with people… haha) so it’s not too bad. It helps me not stress about food. Because either way I’m fretting about it, but I think writing it down forces me to be a bit more logical and calm!

  5. Ah! I’m so glad I found your blog. We are both eating within the same “calorie budget” so I plan on stalking you for some healthy recipes to switch it up. :) Your little almond cake sandwiches look delicious.

    Oh, and another sidenote… I see you love coconut butter just like me! I’m obsessed. I will admit that I enjoy spoonfuls of it more often than I use it with food- LOL!

    • oooh, I will definitely do the same with your blog! Awesome to get ideas from people following the same budget. & coconut butter is sooooo goooooood. I totally jut eat spoonfuls of it all the time instead of on stuff :P
