Sleepy Sunday

Oh man, for some reason I have been sleeping horribly this week, probably because I’ve been congested, but a lil’ NyQuil did WONDERS for me last night. I think I kicked my cold and I feel a million times better. So I woke up quite chipper this morning and decided to make myself a slightly different breakfast!

Healthy Pumpkin Pancakes

photo(104)-1/4 cup pumpkin puree

-2 tablespoons almond flour

-1/4 cup egg whites

-1/4 tsp cinnamon, stevia, and baking powder

1) Mix all the ingredients in a bowl or mug and pour onto greased griddle or pan. Makes two little pancakes (make them smaller, because they’ll fall apart if they’re too big.)

Mmmmmmmmm delicious. I think I still like my two ingredient banana pancakes best, but I might switch it up with this every once in a while.

 

And of course I had to smother them in Justin’s Vanilla Almond Butter and chocolate coconut butter:

Anyway, back to the weekend! I had a lovely time at home with the boy. LOTS o’ eating (delicious home cookin’ = calories out the window! At least I’m back on track today.) We went to hot yoga, had lunch at my grandparents (mmmmm Italian sammies= heaven), and other shenanigans. Oh, we also got dressed up and went out to a nice place for dinner:

Now I’m off to do a TON of homework :/. Hope everyone else is having a lot more relaxing Sunday than I am!

  1. Those pancakes sound pretty good… love me some pumpkin pancakes, especially topped with nut butter. ;) You look amazing in your dress, so pretty! Oh, and that cookie dough… YUM!! So jealous. Glad you had a good weekend & slept better! Hope the homework isn’t too bad… I start classes again tomorrow, bleh. ;)
