Chicago, you are a city I adore for many reasons……but the weather is absolutely NOT one of them. It was 1 degree (Fahrenheit) when I woke up yesterday morning. Zero! Insanity. Enough complaining though, on to my favorite weekly link up (Courtesy of Jenn @ Peas and Crayons, as usual).
Well I’m still on a two-ingredient pancake kick, but this week I switched it up and used 1/4 cup egg whites, instead of 1 egg, and a banana. It was spectacular! It made the most fluffy delicious pancake yet:
I mean, just look how fluffy it is!!
I’ve been switching it up with pumpkin pancakes here and there this week too though.
Smothered with chocolate coconut butter of course.
I also broke out the crock pot (I’ve been meaning to since reading about Julie’s crock pot challenge) and made this recipe (I found a link to it on Katie’s blog)
Mmmmm. I plan on making this more often… so easy! Just throw it in the crock pot for a couple hours and voila!
I also made the best little snack earlier this week:
Banana slices, chocolate pb2, and shredded coconut all in the microwave for a few seconds. It felt really decadent but so low cal. Love it.
I’m off to bury myself in homework on my “day off”. Happy Wednesday folks.

Pancakes make the best breakfast ever!
agreeeed
I hear ya–time to bundle up!! Eek!! Stay warm!
I know! Happy I don’t have Wednesday classes… so not leaving my apartment!
That is freezing!!! I don’t know how you do it!!! Chocolate coconut butter sounds unreal!
I’m not sure either… If I hadn’t lived here my whole life I don’t think I could handle it!
Yum! That snack looks awesome! Chocolate, PB and bananas are always a winner in my book
I’m so intrigued by that pancake!! Need to tryyyyy. Have a great Wednesday, girlie
IT was definitely tasty. Let me know if you try the pancake!
Your two-ingredient pancake looks amazing! And really, so so fluffy! I got my mom addicted to them, and I’ll have to relay the idea of using just egg whites
Good luck with your HW!
Totally! I used egg whites because it was all I had, but I definitely like it better this way
reading about your chocolate coconut butter every day has me dreaming of it! It looks so tasty. Where do you get it?
I got it at whole foods! That’s the only place I’ve found it. you definitely need to make a WF run for it. Worth it!
That warm little banana bowl sounds so tasty!
Also, it’s so effing cold in Pittsburgh, too. We’re at 8F, though, so I guess I can’t complain as much?
Uhg, no, complain all you’d like! Anything below 10 is awful in my opinion. And I normally love cold food, but I’ve been heating everything up cuz its so cold haha
Your pancakes look so amazing, girl!
thanks! I was never a pancake person, so I’m surprised I’ve been diggin them lately
I am in shock at how fluffy you got it, like seriously blown away.
SAME! Totally an accident. Just try it with only egg whites!
Mm your fluffy pancakes look amazing! I wish I could make these but I won’t be home for awhile. Yay dorm food and dining halls =p
haha yuuuck, I’m so glad I don’t live in the dorms anymore!
haha yuuuck, I’m so glad I don’t live in the dorms anymore!
(p.s. some of my comments have been going to the spam folder for some reason, are you getting my comments on your blog?)
In the past 2 days or I don’t think so! Just your likes. Weird??
ahh check your spam folder in the comments section!
I just book marked your pumpkin pancake recipe…looks amazing and can’t wait to try it
And I can’t believe this cold weather either! Seriously…I haven’t been able to run in two days (since I have no treadmill access)…no run tomorrow will make me incredibly cranky!
Let me know if you like them
. & Oh I hate that! thankfully I live right across the street from a gym, so I have no excuse to not work out even when it is cold haha.
(p.s. my comments on people’s blogs have been going to the spam folders lately, have you gotten any of my comments on your blog?)
Those pancakes look delish and I so have to try that snack…with some vanilla almond butter, mmm!
vanilla almond butter is my fav
)
OMG to that weather. EW! I thought I had it bad with 32 degrees. YUM to those pancakes!
Haha oh my god I would be walking around in shorts and a tank top in that weather (ok not really haha)
Lots of good food! So did you get your pancakes fluffier just from using more egg white? I think I’m going to make another batch because they are so delicious. I was thinking about combining pumpkin to the 2-ingredient pancakes to fluffin them up a little. We’ll see how it goes!
Oh let me know how that goes with adding the pumpkin. I think they’re so fluffy because it’s only egg whites and it is probably a little more liquid too than just one egg. Plus I think the yolk kind of makes it denser.
I really need to try the bananna egg pancakes!
SO yummy! I don’t know how but it really does taste like a pancake.
It’s so cold in Boston, too! The pancakes look super delicious, but the topping makes it
This cold is killin meee. And for sure, a plain pancake is a very sad pancake!
Your pancakes look perfect! I will definitely be trying the egg white method. I finally made one and they are so good! Happy WIAW Jessie:)
I know, I was so shocked at how delicious they are. Happy WIAW Sunnie
I LOVE pumpkin pancakes, especially with chocolate chips.
Saaaaame here
Is that almond butter in the first pic? Because yes, that pancake does look delicious and all, but that it one of the prettiest smears of butter ever–is that a weird comment? I don’t care. Can you come put almond butter on all my food for me?
I feel like other people might find that weird, but I don’t at all. It’s totally almond butter and it’s spread so well because I heat it up before I put it on!
Ah so for some annoying reason, your comments have all gone to my spam! How annoying! I was literally just wondering about that. Silly wordpress
I knew it! Idk why, but theyve been doing that for some reason
Wow! Your pancakes look tasty. Look your snack too.
I need to proof read.
Look should be Love. HaHa
Hahaha ok that makes more sense! Thanks
I love warm banana and nut butter. One of my favorite snacks ever! I feel ya on the paleo pancakes. I eat them waaaay too much
They’re just so tasty! And I’ve never tried warmed up bananas+butter until now.
