S-s-so C-c-cold

Chicago, you are a city I adore for many reasons……but the weather is absolutely NOT one of them. It was 1 degree (Fahrenheit) when I woke up yesterday morning. Zero! Insanity. Enough complaining though, on to my favorite weekly link up (Courtesy of Jenn @ Peas and Crayons, as usual).

Well I’m still on a two-ingredient pancake kick, but this week I switched it up and used 1/4 cup egg whites, instead of 1 egg, and a banana. It was spectacular! It made the most fluffy delicious pancake yet:

I’ve been switching it up with pumpkin pancakes here and there this week too though.

Smothered with chocolate coconut butter of course.

I also broke out the crock pot (I’ve been meaning to since reading about Julie’s crock pot challenge) and made this recipe (I found a link to it on Katie’s blog)

Mmmmm. I plan on making this more often… so easy! Just throw it in the crock pot for a couple hours and voila!

I also made the best little snack earlier this week:

Banana slices, chocolate pb2, and shredded coconut all in the microwave for a few seconds. It felt really decadent but so low cal. Love it.

I’m off to bury myself in homework on my “day off”. Happy Wednesday folks.

  2. I just book marked your pumpkin pancake recipe…looks amazing and can’t wait to try it :) And I can’t believe this cold weather either! Seriously…I haven’t been able to run in two days (since I have no treadmill access)…no run tomorrow will make me incredibly cranky!

  3. Lots of good food! So did you get your pancakes fluffier just from using more egg white? I think I’m going to make another batch because they are so delicious. I was thinking about combining pumpkin to the 2-ingredient pancakes to fluffin them up a little. We’ll see how it goes!

    • Oh let me know how that goes with adding the pumpkin. I think they’re so fluffy because it’s only egg whites and it is probably a little more liquid too than just one egg. Plus I think the yolk kind of makes it denser.

  4. Is that almond butter in the first pic? Because yes, that pancake does look delicious and all, but that it one of the prettiest smears of butter ever–is that a weird comment? I don’t care. Can you come put almond butter on all my food for me?
