WordPress just notified me that one year ago today I created my blog! Happy blogiversary to meeeee
Seriously, when I started this blog I had no idea what I was getting into. I did not expect to make so many friends and to have so many awesome conversations with people across the world. Gaaah, I’ve just been so lucky to not have any horror stories (yet) and I’ve loved EVERY minute of blogging and reading your lovely blogs. This is getting so sappy, but I mean it…. I need to stop now before I start sobbing uncontrollably on you guys (kidding.. kinda). On to the fooooood!
I got in one of those moods last night where I just wanted to cook EVERYTHING and make a feast. Soooo, that’s what I did. I’m going to have leftovers forever, but it was worth it and oh so delicious:
Chicken, broccoli, butternut squash, and jicama. All roasted at 400 degrees.
I used my favorite steak seasoning (I used it on tilapia once too) for the chicken and it turned out SO WELL. I cooked it for about 20 minutes. Tender, juicy, garlicky, with a slight lime flavor= lick the plate good.
I roasted the squash for about 45 minutes-ish. Loaded up cinnamon and agave (honey would word just as well) and a little butter. Literally tastes like candy.
The broccoli was my usual spices for about 20 minutes.
Has anyone else tried jicama before? I’ve never actually tried it, but when I searched online there were two main ways of preparing it. The first was to roast it and the second was to eat it raw. I went for the roasting route (about 30 mins) with my usual spices and some chopped onions.
I’m not entirely sure if I loved jicama yet. It’s kind of like a mix between a potato and an apple and I’m just not sure how I feel about that haha. I didn’t dislike it, but I think I would have rather had roasted potato fries instead. I think next time I’ll try it raw with a sweetened yogurt dip or something like that.

You have to put lime juice on it raw and let it sit for a bit! Oh my god, and then invite me over.

Definitely try the jicama raw . . . I love it that way. Chopped and tossed onto a mexican style salad (think black beans, avocado, bell peppers, etc.), it’s delicious!
I will definitely try that! Not sure if I like it on it’s own, but that sounds yummy.

I’ve had jicama raw only. It tastes good in salads. It gives a little extra crunch.

Second off – I have had jicama once, in Mexico City. There was a street vendor selling huge fruit salads (for under $2) and ours included jicama. It also had mango, pineapple, watermelon, cantaloupe, papaya, lime juice, salt, and chili pepper nOM NOM NOM NOM nom NOmNOm NOM noMnoM
