Good morning! Hello! How was your weekend! Have you had as much coffee as me today??

We made my this recipe for meatloaf, but added two cups Italian stewed tomatoes.

Turned out BEAUTIFULLY…. unfortunately I only managed to snap one lopsided picture of it before I devoured it… oops…

- Being inspired by Kyra @ Scribbles and Sprinkles and making my two ingredient pancakes with squash instead of banana:

(1/4 cup mashed cooked butternut squash and 1/4 egg whites)

SO GOOD. I am so into squash right now. Butternut and acorn are my current faves.

But the most marvelous thing today?

AHHHHH. I am TOO excited. I may or may not be skipping class, but this is a once in a lifetime opportunity (okay, that might be a bit over dramatic, but seriously, it’s a lecture class and she reads straight from the slides which are all online). I don’t know how I’m going to wait for tonight, I’m so anxious. I hope we get good seats.. Wish me luck everyone!

  1. Seeing Josh Radnor is awesome, have fun at that! I really need to get onto these two ingredient pancakes! Week in and out you rave about them and they do look delicious…I’ll try to give them a go this upcoming weekend :)

  2. Weeeeee!! You get to meet Ted???? Lucky girl!!! And yay for girls nights! Those are the best :) you make me want to try squash, too, haha…love spaghetti but other forms intimidate me…perhaps I’ll pick up a pack of already cut squash and start there!

    • I CAN’T WAIT. Ahhhhh, can it be night time already? & omg I LOVE acorn and butternut. Put a little butter and cinnamon on them and I PROMISE you will love them!! You need to try them asap (especially if you like things like sweet potatoes)

    • Writing with a caffeine buzz is the beeest. I think I had too much today, but I don’t even care because I feel so good!!! Going to be so productive today. Hope your week is starting off right as well!!

  6. Mmm, those pancakes look really good! I’m really into squash, but mainly kabocha. LOVE it. I really like butternut too & acorn, eh, not so much. Hope you have a great time seeing the speech tonight!

  7. Love the Girl’s Night Out pics! Squash is an awesome and less sugary way to make the pancakes. I will have to check that out. I wonder if pumpkin would work? Where is Josh speaking? That is awesome. Hope to see some pictures of you stalking him…he he!

    • I actually made pumpkin pancakes last week if you wanna dig up that recipe! they were pretty decent, but I really love squash and banana more. And I only got one blurry pic of him, but you can bet I’ll be putting it on here!

      • I think I saw that recipe and have added it to my list. I love squash and the idea of using it in pancakes is genius. Wish I had time to make them for brekkie today but I gotta get to work : )

  8. Ahhh your pancakes sound divine! I never think to have sweet potato for breakfast.
    And that meatloaf looks really good. I made some meatballs the other day which reminded me of how much I love beef mince. I never normally eat beef so it was such a nice change.

  9. Oh my heavens, yum! I love the idea of subbing butternut squash for banana in the two-ingredient pancakes! I’m definitely going to try that!
