Quite chipper today :) . I love Thankful Thursday link up by Jessie from Jessie Loves to Run: It forces me to think about the good things!

For starters, I am thankful this week is over. It’s been a bit intense! In case you missed it, this is how I’ve been feeling about homework lately:

I’m thankful that I think an interview I had yesterday went well! And even if it didn’t actually go as well as I think I bought a cute dress for it that I will DEFINITELY be wearing again:

Cute, no? I wore a jacket with it, but I didn’t get a picture of that.

I’m also thankful that I tried Kim’s Coconut Cookie Dough recipe last night in my frozen yogurt for dessert. Yummm.

(I also tried Kelly’s low calorie coconut butter and almond butter earlier this week, but didn’t get any pics. Sorry Kelly! They were both delish!!)

& lastly, I am thankful someone commented here telling me try spaghetti squash, because I finally did last night and it turned out brilliantly:

Mmmmm. I made it with scallops and a sort of pesto sauce recipe I made up last night.

(Sort of) Pesto

-3 cups basil leaves

-2 cups stewed tomatoes

-handful sundried tomatoes

-2/3 cup greek yogurt

-1/4 cup hummus

-1/2 cup chopped red onion

1) Throw everything in the food processor and blend until you reach the desired consistency. Definitely more creamy than normal pesto, but I liked it like that.

  2. Your dress is adorable, and I want it since I love polka dots! Where did you find it?? And that pestoesque recipe sounds amazing…you always post recipes that look delicious and easy…such a gem :)

    • Why thank you Kelly ;) . I loved them! I’ll get pictures of them next time I make them. Deliciouuuusss. (I totes made a sandwhich with the coconut one and banana slices.. it was perfection.)

  3. Mmm, spaghetti squash–I only just tried it for the first time a few months ago, so good! I need them to go on sale again, I want more… And oh, you are TOO adorable, plus that dress is gorgeous!

  4. omg i am absolutely in love with that dress, where is it from?! you look gorg by the way! and that “pesto” sounds like a concoction i’d make it sounds great! spaghetti squash is the best, i havent had it in awhile because the last one i got i went to pick up the next day to make it and my hand like sunk into it because it had rotted. got me so grossed out kind of scarred lol
