I am SO stressed with school so this will be a quickie post. Trying to appreciate the good things going on lately, but winter weather + midterms = unhappy Jess. BUT, there are still good things to focus on. Justbepositivedammit.
Marvelous things from the week:
-Relaxing and playing stupid video games (i.e. Sly Cooper)
Seriously, why do old ps2 games make me feel so relaxed?? Is that odd? My favorites are Jak and Daxter, Sly, and Kya… maybe they make me feel relaxed because I played them all as a kid? Anyway. On to the next one. (Tell me someone else got that Jay-Z reference..)
I just made my pasta “sauce” (I say that because it’s almost more like chili).
My Pasta “Sauce”
-1 chopped onion
-1 tablespoon minced garlic
-1 pound lean ground beef
-1 small can tomato paste
- little amount of water (I used the empty tomato can to measure out the water, you can add more if you want this more sauce like)
-Salt, pepper, garlic powder, oregano, thyme, basil to taste
1) put the onions and garlic in a pan or pot with some olive oil. Cook until the onions start to turn translucent and then add the beef.
2) Cook the beef until it’s not red anymore, then add the tomato paste and water. Add the spices at this point and taste test until you like it.
I had mine with spaghetti squash and mini cheesecake cupcakes for dessert (a.k.a. crack cakes… the boy and I finished off an entire batch in two days..) :
Of course I had to top mine with a little chocolate pb2…
