Oh you guys. This week is rough. It’s only Wednesday. I’ve been buried under a pile of homework-it’s a miracle I’m alive and well. At least I’ve been eating pretty clean (minus this weekend when I gorged myself on cake.)
Anyways. I’m not feelin the words right now, so on to “pretty pictures of things we ate” (Jack Johnson lyrics anyone? Nah, it’s ok. Totally random line from Inaudible Melodies, it’s cool if you missed it).
As usual WIAW by Jenn @ Peas and Crayons.
This week there’s been a whole lotta boring meals like this:
Survival mode baby. Although I’ve gotta say, Sunnie you’ve got me hooked on the hummus + chicken sandwiches. Mmmmm.
Lot’s of roasted veg, cuz it’s easy and yummy.
(plus scallops)
I’ve also been obsessed with Kim’s coconut cookie dough and Kelly’s low calorie coconut butter, so I mixed them together and have been spreading them on everything and putting them in everything:
Too. Delish.
Off the do more homework….. If no one hears from me in a week please tell my family I loved them. And to have cupcakes in my honor. (Okok, I’m being melodramatic, but today is going to be rough!)

I’ll have to check out those cookie doughs! I love making healthy cookie dough for a snack.
It’s so good!
Ohh yummm I gotta try those cookie doughs! and those roasted veggies looks great. Simple always taste better! I hope your week gets better!!
They’re so yummy! And thanks girl
good luck on work, that is no fun. I have to check out that coconut butter, it looks so interesting.
It’s a lot yummier than it looks! I tastes like straight up cookie dough. Especially when you put it on top of frozen yogurt. mmmmmmmmmmm.
Hang in there, Jessie. I know how those weeks go-luckily I’m having an up week as opposed to two weeks ago. I noticed your comment on my blog yesterday, and you just seem to be kind of in a down week. Keep your head up, be proud of how your handling it (typically when I’m stressed, clean eating is pretty nonexistent haha). Have a wonderful Wednesday! Those scallops (and veggies) look awesome!
Awwww Abby you are the best!! I am totally having a down week, but I just finished a lot of work today (I don’t have class today) and I feel a million times more in control. I’ll still have a lot of homework this weekend, but way more manageable now. Plus after Monday I’ll barely have any work PLUS almost Valentine’s day PLUS my birthday a week after that. So many good things to look forward to.
Thank you so much for helping me stay positive this week girl!
Alive and well I hope! I have lots of school work to do too. Basically it’s class, eat, blog, work, bed. Haha. *Rinse and repeat*
Those scallops and roasted vegetables look really good. I like the close-up shot.
And all of that coconuty-goodnes… Cookie Dough = LOVE.
Haha I feeeeel that! Can’t wait to get a break from the routine. So close until Valentine’s day/my bday/ and all sorts of fun things. Just gotta hang in there this week! Also you should definitely try the cookie dough. Soooo goood.
Nothing wrong with the classic sandwich + fruit combo! Glad you’re surviving the piles of homework–just think, it’s more than half-way towards the weekend now!
I need to try that coconut cookie dough, always looking for ways to use up my ridiculously large bag of coconut flour.
Haha I know, so close to the weekend I can almost taste it! and yeah, I’m always looking ways to use up coconut flour too, this is perfect for that. (I totally burned through what I had left actually!)
Made some last night to crumble on my Greek yogurt–Holy cow good stuff! Thanks for the inspiration! The tasty, tasty inspiration.
haha you’re welcome! It’s even better in TJ’s frozen greek yogurt. Like so good I finished off my coconut flour and the frozen yogurt carton… oops…
Aw you can do it! I remember feeling so stressed about school, especially because it always seemed like professors like to give tests all at the same time. So annoying! And those roasted veggies look so good! Nice pic!
uhg totally! I’m an idiot and signed up for some final presentations this week too (not realizing it was midterm week…oops) So I have midterms + finals this week. Intense! The rest of the quarter will be sooo easy after this though!
“Have cupcakes in my honor” – love this! I would want people to have cupcakes in my honor, too!
And, UGH, I know what you mean about feeling overworked and undermotivated. bleh!!
I knowww. It’s tough classes + winter. Grossss. I know you understand. Just gotta keep in mind spring is coming! It will get here. (cannot wait)
The roasted veggies look amazing. I’m salivating over here, lol
thanks girl
Yay for being alive…but boo for things being rough
Your eats still look delicious and those are things I happily eat whether I’m in survival mode or not haha…cupcakes, however sound fabulous right now…I say you get some and have them in my honor
hahaha perfect! I will do just that. And
i feel so much better after getting a ton of work done today, so
i think the worst day homework-wise has passed. Phew!
Oh sounds rough!!! No doubts you’ll power through, easy for me to say.
ah I powered through! you were right haha. I feel so much better after getting a ton of work done today
Ahh roasted veggies and scallops look amazing!
thankyouuu
Sometimes simple meals are the best! Thanks for the shoutout girl- isn’t that like the best combo ever? And hope your week gets a little better- I’m buried under homework too!Happy WIAW Jessie:)
It IS the best combo ever. SO good!! Hope your homework goes well too. Happy WIAW Sunnie!
Well I hope you managed to make it through the day, and I hope the rest of your week gets easier. I love the roasted veggies.
Thanks girl!
Your meals look anything, but boring to me!!
Hummus and chicken sandwich sounds simply delish….I’m thinking tomorrow for lunch. And that picture of roasted veggies and scallops has me drooling. Love your combo with the cookie crumble and coconut butter…definitely going to be giving this a try!!
Thanks Kim! Definitely try the chicken and hummus sandwich, soooo worth it.
Good luck this week! It looks like you have some great fuel to get you through! I love that you are posting about what other bloggers have made! This is a great community!
Yum! They look amazing!
Thanks!!
Ah, it’s so good to hear that you are still alive! I’m not sure what I would do without another blogger named Jessie to send love to everyday!!
Awww thanks Jessie
D
Thanks! I love this community too
so much inspiration and so many good ideas!
Down with homework and midterms! But once you’re done it does feel good!
I remember “studying” for a high school math class. YTV had a Land Before Time marathon and I watched it. I didn’t end up studying at all! I wouldn’t dare try that in university
hahaha if that was on I would TOTALLY watch it still..
Hey, I say when you find something you like, just keep at it! haha hang in there girl!
thanks girl
I feel ya on the homework front – I thought this would be a lighter semester but so. much. reading. Oie. Anyways – roasted veggies look great!
Saaaame, I’m sick of the amount of reading I have to do. And I love to read!!
WHAT? Cookie dough coconut butter? You are brilliant, my friend.
Why thank you Kelly
There is such a big coconut craze lately! I’ll have to check out those buttas
Hope you’re surviving the rest of the week!
Mmm I know I’m loving it. I’ve been obsessed with coconut for like a year now. Can’t believe I didn’t like it before. & Thanks girl! Once this weekend is over I will be a million times more relaxed because midterms and a couple huge projects will finally be over.
Going to check out those cookie doughs now!
let me know what you think!
