WIAW- I’m Alive Edition

Oh you guys. This week is rough. It’s only Wednesday. I’ve been buried under a pile of homework-it’s a miracle I’m alive and well. At least I’ve been eating pretty clean (minus this weekend when I gorged myself on cake.)

Anyways. I’m not feelin the words right now, so on to “pretty pictures of things we ate” (Jack Johnson lyrics anyone? Nah, it’s ok. Totally random line from Inaudible Melodies, it’s cool if you missed it).

Survival mode baby. Although I’ve gotta say, Sunnie you’ve got me hooked on the hummus + chicken sandwiches. Mmmmm.

I’ve also been obsessed with Kim’s coconut cookie dough and Kelly’s  low calorie coconut butter, so I mixed them together and have been spreading them on everything and putting them in everything:photo(119)

Off the do more homework….. If no one hears from me in a week please tell my family I loved them. And to have cupcakes in my honor. (Okok, I’m being melodramatic, but today is going to be rough!)

  1. Hang in there, Jessie. I know how those weeks go-luckily I’m having an up week as opposed to two weeks ago. I noticed your comment on my blog yesterday, and you just seem to be kind of in a down week. Keep your head up, be proud of how your handling it (typically when I’m stressed, clean eating is pretty nonexistent haha). Have a wonderful Wednesday! Those scallops (and veggies) look awesome!

    • Awwww Abby you are the best!! I am totally having a down week, but I just finished a lot of work today (I don’t have class today) and I feel a million times more in control. I’ll still have a lot of homework this weekend, but way more manageable now. Plus after Monday I’ll barely have any work PLUS almost Valentine’s day PLUS my birthday a week after that. So many good things to look forward to.

  2. Alive and well I hope! I have lots of school work to do too. Basically it’s class, eat, blog, work, bed. Haha. *Rinse and repeat* ;)

    Those scallops and roasted vegetables look really good. I like the close-up shot.

    And all of that coconuty-goodnes… Cookie Dough = LOVE.

    • Haha I feeeeel that! Can’t wait to get a break from the routine. So close until Valentine’s day/my bday/ and all sorts of fun things. Just gotta hang in there this week! Also you should definitely try the cookie dough. Soooo goood.

  3. Nothing wrong with the classic sandwich + fruit combo! Glad you’re surviving the piles of homework–just think, it’s more than half-way towards the weekend now!

    I need to try that coconut cookie dough, always looking for ways to use up my ridiculously large bag of coconut flour.

    • uhg totally! I’m an idiot and signed up for some final presentations this week too (not realizing it was midterm week…oops) So I have midterms + finals this week. Intense! The rest of the quarter will be sooo easy after this though!

  4. Yay for being alive…but boo for things being rough :( Your eats still look delicious and those are things I happily eat whether I’m in survival mode or not haha…cupcakes, however sound fabulous right now…I say you get some and have them in my honor ;)

  5. Your meals look anything, but boring to me!! ;) Hummus and chicken sandwich sounds simply delish….I’m thinking tomorrow for lunch. And that picture of roasted veggies and scallops has me drooling. Love your combo with the cookie crumble and coconut butter…definitely going to be giving this a try!!

    I remember “studying” for a high school math class. YTV had a Land Before Time marathon and I watched it. I didn’t end up studying at all! I wouldn’t dare try that in university

    • Mmm I know I’m loving it. I’ve been obsessed with coconut for like a year now. Can’t believe I didn’t like it before. & Thanks girl! Once this weekend is over I will be a million times more relaxed because midterms and a couple huge projects will finally be over.
