Snow Dayyyy

Anyway, I enjoyed a glorious snow day yesterday and have been making a ton of new to me recipes this week, so without further ado:


If you guys haven’t checked it out yet, check out my Savor the Flavor Sunday post from this weekend. I feel like I’ve been in a bit of a food rut lately, but making this list FINALLY helped me get out of the rut. Yay for cooking!

So far from the list I’ve made:

Kaity’s quinoa veggie muffins

I used red quinoa instead of regular, because it was all I had in the kitchen. Also for the veg I used zucchini and onion. Yum! These are SO nice for packing into lunches.

Sarah’s grilled avocado cranberry goat cheese sandwich

I got a lot of questions on this one so I went ahead and tried it out! I used regular bread instead of ezekiel and raspberry preserve instead of cranberries because that’s what I had on hand. THIS WAS SO GOOD. I didn’t really know what to expect from the taste, but it was very sweet with the preserve, really creamy from the avos and goat cheese, and a little tangy. Out. of. this. world.

I had this with a side of kale with cilantro lime dressing from Trader Joe’s that I heard about on Kim‘s blog.

Last, but not least I made Kathy’s quinoa and bean bowl with shrimp

Sorry for the crappy pic, I took it in dim lighting and my hands were shaking with anticipation. Also, It looked like poop after mixing it all up:

But it tasted like pure heaven in my mouth.

….ok, I didn’t really follow the recipe (when do I ever follow the recipe exactly?) BUT this dish was inspired by her recipe. Here’s my version:

-2 tablespoons cilantro lime vinaigrette (From Trader Joe’s)

-2 tablespoons corn salsa (from Trader Joe’s)

-1/2 cup cooked quinoa

-1/3 cup black beans mixed with cooked onion

-4 oz cooked chopped beef (I cooked mine in a pan with olive oil/garlic/lime/Lawry’s seasoned salt)

Mix it all up in a bowl and chow down. So hearty and healthy and yuuummmmyyyy.

  2. Everything looks fantastic! I think cranberry + cheese is such a great combination. I’ve made cream cheese raspberry jam sandwiches before that are just incredible!
    Glad to hear you enjoyed your snow day!

    • Haha no not at all! There’s some foods that I just can’t stand either (i.e. olives). I bet it would be delicious with cream cheese! It would probably be good with a lot of cheeses actually

  3. That sandwich looks so good – I saw it on Sarah’s blog and meant to buy some avocado at the store but that was the 1 thing I forgot, bust… And love the idea of adding some quinoa to the eggy ups!
