So this weekend was pretty rough with finals coming up. My classes this quarter are just really overwhelming! Trying to be positive though and look on the bright side. I don’t feel like talking about how much work I had to do this weekend, or how much work I still have to do, so let’s just move on to the good stuff with Marvelous in my Monday:
Brought to you by Katie, as always.
Marvelous is hosting my very own link-up yesterday! If you haven’t done so already, check it out here. You can still link to it today if you’d like
. I really like the idea, but I don’t know if it’ll really get popular, because so many people don’t blog on the weekends. I might end up moving it to another day, but I’ll decide later. I really like the banner I made for it though:
Isn’t it cute?
Another marvelous thing this weekend was crossing another recipe off my “to try” list.
Karey’s kabocha squash with coconut butter
Ok….so it wasn’t really the same. I could not find kabocha squash anywhere! So I settled with acorn squash, greek yogurt mixed with pb2, and almond butter on top. It. was. so. good. Definitely the perfect winter dinner if you ask me. Sweet, cinnamon-y, warm, mmmmmm.
Last marvelous thing this Monday: the fact that in less than two weeks I will be on a beach for spring break.
CAN’T WAIT.

Crossing my fingers that these next two weeks fly by for you girl!
thanks love! when you going to the states again? Hope time flies until then for you too
I hear ya!! Two weeks till spring break, baby. I may not be traveling like you are, but a break is a break!! Yay!
Of course! I never travel for sb which is why I’m particularly excited haha
So jealous of the trip you have planned!
That acorn squash recipe turned out looking fantastic.
Now it’s my turn to be jealous when you have spring break!
It’s going to be so cold here this week. 30s almost everyday but today. And no winter coat because Madison was stupid and forgot to bring it from home
hahaha awww, that suckssss! I have this ridiculous eskimo coat that goes down to my ankles and idk what I would do without it! Hope you make it through
Good luck with your finals! I am sure that they will go well! And just think, all of the stress will be worth it when you are relaxing on the beach….lucky girl!
You’re so right. I’m just going to chant that to myself this week! haha
Good luck with your finals. There is light at the end of the tunnel!
Greek yogurt mixed with PB2? I never thought to do that, sounds so good! I might try that on a sweet potato.
Omg, you NEED to try it asap! It’s my favorite snack ever. Sometimes I’ll put it on two-ingredient pancakes or I’ll mix it with chia seeds and granola. I’m drooling just thinking about it.
ouchhh i no this final with all finals and testing before spring break, it cant come soon enough !! that squash does look like the perfect winter meal, holyyum
Break is so closssee I can almost taste it
kabocha is hard to find this time of year, but acorn is pretty tasty too!
Yeah, I’ve never seen it before too. I wanna get my hands on it though!
good luck with your tests. I wish i as going to a beach, but I can live vicariously through you ha
hahaha thanks!
i have been meaning to try that squash but have not found it anyways. Looks delicious. I wish I had spring break too and go for a sunny getaway esp on a 21st birthday. Enjoy
I know, I can’t find it anywhere!
Maybe you have already mentioned, but which beach are you going to? Please enjoy that sunshine for me!!!
I actually can’t remember off the top of my head… hahaha my parents planned this trip and I’m just ecstatic I get to go with! I know we will be near Disney Word because we are going there one day (fucking happiest place on Earth right there.)
Keeping my fingers crossed for your finals! Nothing like the prospect of a beach holiday to keep the mood up throughout that stressful time, right?
oh definitely! It’s keeping me going
I know what you mean. I have midterms this week which are no fun. As for the savor the flavor sunday, I think you should stick with it! I am going to try sticking with it, hopefully we can get it going! And I am so jealous that you will be spending your spring break on the beach! Lots to look forward to
Come on summer!
Aw thanks for the encouragement girl. Good luck with your midterms!
TAKE me to the beach with you!!!!!!! Ahhhhhhhh! Lucky girl!
Happy week! <3
Thanks!
I love your idea for a link-up, it would be a great way to organize the 10 million recipes I bookmark each week and really streamline it to the top ones/motivate me to actually make some. But yeah, I’m one of those not-blogging-on-the-weekenders
Good luck with finals!
Yeah, I know what ya mean. Think I should change it to a different day? You can always link back on Mondays instead too! And thanks
I feel ya on the boatloads of homework. So glad you tried my squash concoction!! Sorry you couldn’t find any kabocha though. Yours looked yummy!
Nice link-up pic too, BTW!
thanks
. Where do you get your kabocha btw?
I get mine at the grocery store… Festival Foods. Guess that’s one plus to living here. Surprised I’ve been able to get them still.
Warm and a little sweet dinners are the best. Nut butters make everything taste amazing!
Agreeeed
Hang in there girl! You can make it to your beach getaway!!
thanks!!
Love the beach ! I totally need a vacation!
saaaame!
That. squash. is. unbelievable. Haha I’m making it asap:)
Soooo yummy
Ohhhh yum!!! Have fun at the beach
I’m so jealous!
thanks love
That kabocha squash looks delicious. I don’t think I’ve ever had it!
thanks
I couldn’t actually get my hands on the kabocha, so I used acorn instead though
. Still delicious, but I want to try kabocha so badly!
I still haven’t tried coconut butter! I need to search it out because it looks so good. The banner for your link-up is so cute!
oh you should!!! It’s so good
I want to go with you on spring break! totally jealous…
I hope it goes by quickly for you!
thanks
I love the beach! Bet you’re counting down the days!!
tooootally!
I hope your school load gets better soon. Just keep picturing that beautiful beach and those blue waters.
Oh I will
