MIMM: Almost There

So this weekend was pretty rough with finals coming up. My classes this quarter are just really overwhelming! Trying to be positive though and look on the bright side. I don’t feel like talking about how much work I had to do this weekend, or how much work I still have to do, so let’s just move on to the good stuff with Marvelous in my Monday:

Another marvelous thing this weekend was crossing another recipe off my “to try” list.

Karey’s kabocha squash with coconut butter

Ok….so it wasn’t really the same. I could not find kabocha squash anywhere! So I settled with acorn squash, greek yogurt mixed with pb2, and almond butter on top. It. was. so. good. Definitely the perfect winter dinner if you ask me. Sweet, cinnamon-y, warm, mmmmmm.

Last marvelous thing this Monday: the fact that in less than two weeks I will be on a beach for spring break.

  1. That acorn squash recipe turned out looking fantastic.

    Now it’s my turn to be jealous when you have spring break! :) It’s going to be so cold here this week. 30s almost everyday but today. And no winter coat because Madison was stupid and forgot to bring it from home :D

    • Omg, you NEED to try it asap! It’s my favorite snack ever. Sometimes I’ll put it on two-ingredient pancakes or I’ll mix it with chia seeds and granola. I’m drooling just thinking about it.

    • I actually can’t remember off the top of my head… hahaha my parents planned this trip and I’m just ecstatic I get to go with! I know we will be near Disney Word because we are going there one day (fucking happiest place on Earth right there.)

  2. I know what you mean. I have midterms this week which are no fun. As for the savor the flavor sunday, I think you should stick with it! I am going to try sticking with it, hopefully we can get it going! And I am so jealous that you will be spending your spring break on the beach! Lots to look forward to :) Come on summer!

  3. I love your idea for a link-up, it would be a great way to organize the 10 million recipes I bookmark each week and really streamline it to the top ones/motivate me to actually make some. But yeah, I’m one of those not-blogging-on-the-weekenders ;) Good luck with finals!

  4. I feel ya on the boatloads of homework. So glad you tried my squash concoction!! Sorry you couldn’t find any kabocha though. Yours looked yummy! :) Nice link-up pic too, BTW!
